Frito Pie Casserole

1 lb extra lean ground beef1 can (10 oz) enchilada sauce1 can (15 oz) red kidney beans, rinsed and drained1 can (14 1/2 oz) diced tomatos3 cups corn chips (Fritos)1 cup 2% shredded Mexican 4 cheese blend
Preheat oven to 350 deg F. In large nonstick skillet over medium high heat, cook beef until browned. Remove from heat; stir in sauce then beans & tomatoes with juice. Spread 1 1/2 cups corn chips over bottom of 2 qt baking dish. Top with beef mixture, cheese and remaining chips. Bake 25-30 minutes or until bubbly.
