Polish Cabbage Soup

Ingredients
8 oz Lite polish or summer sausage1/2 head of cabbage, shredded or chopped1/2 red bell pepper, chopped1/3 med onion, chopped1 1/2 c. mushrooms, chopped1 can diced tomatoes1 can water (use tomato can)2 c. chicken broth1 tsp oregano or Italian seasoning
Directions
Chop all vegetables into small pieces. Cut sausage into 1/2" pieces. Saute with chopped onions & peppers. Add cabbage, mushrooms, tomatoes, water and broth. Add oregano or Italian seasoning also works. Simmer for 2 hours.

    This looks ver similar to one in The Richard Simmons line. It calls for California Blend veggies and is very good. His also has no meat, but protein is always good. Am looking forward to trying this. Thanx!! - 5/17/10
