Crock Pot BBQ Pork Stew

Ingredients
2 med onions, halved and sliced very, very thin2 med potatoes (any kind) peeled, cut into bite sized pieces5 very thin or 2 fat carrots, sliced bite sized1 large Granny Smith apple with peel, cut into bite sized piecesSauce:4 cloves minced fresh garlic1 cup catsup or tomatoe pasta sauce1/4 cup yellow or dijon mustard1/4 cup cider vinegar1/2 cup maple syrup or other sweetner3-5 packets stevia, to taste
Directions
For 10 servings (estimated 1-cup each although I must admit I did not actually measure ) count 420 calories each, a complete meal although a simple salad with vinagrette on the side would be nice. Prepare the vegetables and fruit and cut into bite sized pieces. Mix them together and place in the crock pot. Trim and cut each boneless country style pork loin rib into 3 or 4 stew chunks, removing visible fat. Place on top of the veggies in the crock pot. Mix together the sauce ingredients including garlic minced fine. Pour on top. No need to stir. Just put the lid on and cook on high for at least four hours, or on low for 7 or 8 hours, or until meat is done and vegetables are too. Slow cookers vary; mine is a 30- year-old Rival classic so go by your own manufacturer's guidelines for "stews."
