Ingredients
RED PEPPERYELLOW PEPPERGREEN OLIVESRED ONIONMOZARELLA CHEESE BURRITO SHELL - TOMATO FLAVORHOMEMADE SALSA DRIZZLED THROUGHOUT(diced tomatoes, green chilles, cilantro, garlic, onion, jalepeno, little sugar - food processor for just a little bit)
Directions
CHOP VEG.
I use an old griddle that goes on top of your stove. Put a little olive oil on the griddle, lay burrito shell on griddle, sprinkle the shell with veggies, cheese and sprinkle with homemade salsa. Let sit for just a little bit on griddle and then fold the shell into half - let sit on griddle until cheese is melted - serve with sides of lt sour cream and gauc - my kids love these (makes 1/2 servings depending on how big of shell you can find)
