Super Apple Raisin Muffins

Ingredients
5 large apples, peeled & chopped finely3/4 cup sugar1 tbsp honey1 1/4 cups raisins (soaked in boiling water and drained)1/4 cup oil1 tbsp vanilla 1 egg1 cup flour1 cup whole wheat flour1 tsp baking soda1 tsp baking powder1 tbsp cinnamon1/2 tsp allspice
Directions
Preheat oven to 350 F, grease 18 muffin cups.
Mix apples, sugar, honey, and raisins in a bowl, let stand 30 minutes.
Add oil, vanilla and egg, stirring well.
Add flours, baking soda, baking powder and spices to the apple mixture, stir just enough to moisten dry ingredients.
Bake 20-25 minutes.
