Mac and Cheese Bake

50g butter2-3tbsp flourhalf tsp salt2 cups of milk (more if you like a runny cheese sauce)200g grated cheese (i used colby, but you can change out for your fav cheese or whats available)250g pasta (any shape is fine, i use large macaroni elbows as they hold the sauce)250g mixed frozen veges160g shaved ham diced
Makes 1 mac and cheese bake that feeds 3 of us for lunch or dinner. 6-8 Smaller serves would be good as a side dish.
Large pot of boiling water on stove with 1/2tsp salt.
Lid on til boiling and add pasta. Cook as per packet instructions.
Mixed frozen veges into sieve.
Once pasta is cooked, strain over sink using vege filled sieve.
(this makes use of the salted boiling water to take the frozen edge off the veges.
Add veges/pasta and ham to a oven safe dish, put aside and make cheese sauce.
In same pot as pasta is cooked, add butter and melt.
Add flour and mix well, keep mixing over lowish heat to "cook out" the flour a little. Butter mix will look slightly paler. (if it burns, start again)
Use a whisk and add milk a little at a time, whisking to ensure no lumps. Add all the milk and cook on low heat for approx 5-7 mins whisking the whole time. Mixture will thicken as you cook.
Once thick, turn off the heat and slowly start adding the cheese a little at a time, to melt into the sauce. (if you add it all at once you may find a giant cheese blob in the sauce, instead of cheese sauce).
Once most of the cheese is added, whisk a bit longer and then pouy over the other stuff in the oven dish.
Top with remaining cheese and bake at about 180C for about 15mins.
Eat hot or cold.
