Apple Bran Sunshine Muffins

1 cup whole wheat flour1 tsp. baking powder1 tsp. baking soda2 tsp. pumpkin pie or apple pie spice or cinnamon1/2 cup raisins1 cup buttermilk, sour milk, or regular milk1/4 cup cooking oil1 egg1 apple, peeled, cored and shredded1 medium carrot, peeled and shredded1/2 cup canned pumpkin1 overripe banana, mashed
In a bowl, combine flour, baking powder, baking soda, spice, and raisins. Make a well in center and set aside. In another bowl, mix the bran and milk. Let stand for five minutes and then add the remaining ingredients. Pour the wet mixture into the flour mixture and mix just until combined. Spoon into 16 paper muffin cups or greased tins. Bake at 375 for 20-25 minutes. Makes 16
