Mom's summer rice salad

2 cups brown minute rice cooked and chilled1 large cucumber peeled and chopped1 green pepper chopped2 stalks of celery chopped1 cup of cherry tomatos (halfed)1T Mayo1T Italian dressing
Cook brown rice as directed and chill
Once rice is chilled add all chopped veggies into large bowl with rice and then add dressing and mayo. Mix together and serve chilled!
Have fun with it, just like pasta salad!
