Sweet Strawberry Mini Cheesecake Delights

1pkg(8 oz) 1/3 less fat Neufchetal Cream Cheese, softened1 pkg (8 oz) fat-free cream cheese, softened1/2 cup granulated white sugar1/2 cup (4 oz) Egg Beaters1 tsp. real vanilla extract12 reduced fat vanilla wafers6 tbs. Polaner All Fruit Strawberry Spread (for topping later)
(Makes 12 individual servings)
Set oven to 350 degrees.
Line a 12 cup muffin pan with 12 foil baking cup liners.
Place one vanilla wafer into each foil cup.
Meanwhile, in a mixer bowl, combine the softened cream cheese and the sugar and blend until smooth.
Add vanilla extract.
Add the Egg Beaters and blend until incorporated.
Divide and pour the cheesecake batter into the 12 individual foil baking cups.
Bake for 20 minutes, or until nearly set in the centers.
Once cool, top each cheesecake with 1/2 tbs. of the strawberry fruit spread.
Enjoy!
