healthy sweet and sour chicken

Ingredients
2 lbs chicken breast, cut into 2 in chunks1 can pineapple chunks(in 100% juice), save juice for sauce.8 oz water chestnuts, sliced12 oz frozen crinkle cut carrots12 oz frozen 3 pepper and onion blend1 tbs olive oil
Directions
heat olive oil in frying pan, cook chicken till no longer pink
add remaining ingredients, cook till water is evaporated from the frozen veggies.
serve with sweet and sour sauce and rice
