Pecan Coated Salmon

¼ cup melted unsalted butter 3 tablespoons Dijon mustard 1-1/2 tablespoons honey ¼ cup dry breadcrumbs ¼ cup finely chopped pecans 4 salmon fillets, approximately 4 ounces each
Preheat oven to 400. Line shallow roasting pan with foil or cooking spray.
In small pan, melt butter over low heat, turn off stove, add in mustard and honey. Mix together and set aside.
In a small bowl, mix together breadcrumbs, chopped pecans and parsley. I usually blend the pecans in a very small electric chopped (I use my electric coffee bean mixer making sure its very clean before I blend the pecans.)
Place salmon fillets on prepared pan.
Mix honey-mustard mixture with breadcrumb mixture in bowl.
Sprinkle and spread topping over the top of the salmon.
Bake salmon 15 minutes in preheated oven. Serve hot.
