Crispy Kale

Ingredients
1 head of kale {about 8 cups chopped}1 tbsp extra virgin olive oilsalt & pepper to taste
Directions
Preheat the oven to 400F.

Tear the kale into bite-sized pieces. Toss with olive oil and massage into kale until all coated. Sprinkle with salt and pepper and spread on a baking sheet.

Roast for 15 minutes, until leaves are crispy but not burnt.

Makes 4 servings.
