Dr Oz's Spicy Oat-Crusted Chicken with Salsa

Citrus Salsa:3/4 C prepared Salsa3/4 C coarsely-chopped orange sectionsChicken:3 T melted Land O lakes light butter with canola oil2 t chili powder1 t garlic powder1 t ground cumin3/4 t salt1 -1/2 C quick oats, uncooked1 egg, lightly beaten1 T water4 boned and skinned chicken breast halves (about 4-5 oz each)Chopped Cilantro (optional)
In a small bowl, combine salsa and orange sections. Refrigerate covered until serving time.
Heat oven to 375 degrees F. In flat, shallow dish, stir together oil, melted margarine, chili powder, garlic powder cumin and salt. Add oats, stirring until evenly moistened.
In a second flat shallow dish, beat egg and water with fork until frothy, Dip chicken into combined egg and water, then coat completely in seasoned oats. Place chicken on foil-lined baking sheet. Pat any extra oat mixture onto top of chicken.
Bake 30 minutes or until chicken is cooked throat and oat coating is golden brown. Serve with Salsa. Garnish with chopped cilantro, if desired.

After reading the positive reviews, perhaps I made this incorrectly because we didn't enjoy this dish. I will say the chicken was moist, but the oat mixture was dry and chalky - I felt like I was eating Mr. Ed's dinner! We ended up scraping it off and just eating the chicken w/ the salsa. - 9/1/10
