Granola

Ingredients
4 c. Oatmeal1 1/2 c. sliced Almonds1/2 c. light brown sugar1/2 tsp. Salt1/2 tsp. Cinnamon1/4 c. Oil1/4 c. Honey1 tsp. Vanilla extract1 1/2 c. Raisins or dried fruit
Directions
Preheat oven to 300F. In a bowl mix the first five ingredients. In a saucepan warm the oil and honey. Whisk in the vanilla. Pour the liquid over the oat mixture. Stir gently with a wooden spoon; finish mixing by hand. Spread granola in a 15x10 baking dish. Bake for 40 minutes; stirring every 10 minutes. Transfer granola filled pan to a rack to cool. Stir in raisins or dried fruit. Seal in container for 1 week at room temp or freeze for up to 3 months. Makes 7 cups.
