VEAL PARMESAN (for vacation only)

Ingredients
1/3 cup milk3 large eggs3/4 cup grated Parmesan cheese3/4 cup seasoned dry bread crumbs1/2 tsp. black pepper10 (~5 oz. each) pounded veal5 TBSP. extra virgin olive oil2 medium onions minced3 cloves garlic2 (28 oz.) cans tomato puree2 (14.4 oz.) cans diced tomatoes1 1/2 TBSP. parsley, dried1 TBSP. oregano, dried1/4 tsp. black pepper20 (~1 oz. each) oz. sliced mozzarella
Directions
Makes 10 PIG portions for vacation fun.

Beat the eggs and milk in a shallow dish.
Combine Parmesan, bread crumbs, and pepper in another shallow dish.
Dip veal in egg mixture, then coat well in crumb mixture.
Heat oil in large fry pan over medium-high heat. Saute veal until browned, 45-60 seconds on each side. Drain on paper towel. Set aside.
Saute onion and garlic until soft. Then add tomatoes and spices. Reduce heat to low, cover, and simmer sauce for 10-15 minutes, stirring occasionally.
Preheat oven to 350 degrees. Spoon some sauce on bottom of baking dish, arrange veal over sauce, top each one with two slices mozzarella, and pour more sauce on top. Bake until sauce bubbles up, about 25-35 minutes. serve hot.
P.S. As I said we pig out so there is pasta, garlic bread, and salad also! Calories not included here...LOL ;-)
