Jamaican-style sweet potato casserole with banana & coconut

Ingredients
2 (15oz) cans cut sweet potatoes in light syrup, rinsed & drained well OR about 4 cups fresh sweet potatoes, peeled, cut & boiled1 med very ripe banana, cut into bite sized chunks1/3 cup fresh orange juicesalt & freshly ground black pepper, to taste1/4 cup walnuts or pecans, coarsley chopped1/4 cup sweetened flaked coconut
Directions
Preheat oven to 350*F. Lightly oil 8x8 inch square baking dish & set aside.

In medium bowl, mash together sweet potatoes & bananas until smooth but slightly chunky. Add orange juice, salt & pepper and mash until smooth. Transfer mixture to prepared baking dish. Top with nuts & coconut. Cover with foil & bake 25 minutes. Uncover & bake an additional 5 minutes or until coconut is lightly toasted.
