Southwest Lasagna

Ingredients
1 lbs ground turkey, cooked with taco seasoning4 cups black beans, cooked (if canned, rinse first)4 cups whole kernel corn2 cups chopped tomato1.5 cup Mexican style shredded cheese3 cloves garlic, crushed1 cup chopped onion1 Tbsp chili powder1 Tbsp olive oil1 lbs lasagna noodles
Directions
Cook the lasagna noodles, drain and set aside.

Preheat oven to 350 degrees.

Brown ground turkey with the taco seasoning in the olive oil. Set aside.

In a large bowl, combine the black beans, corn, tomato, onion, garlic and chili powder. Mix well.

Place a layer of the lasagna noodles in the bottom of a baking pan or lasagna pan. Top with a layer of turkey, then a layer of cheese (1/2 cup) and then a layer of the beans/corn mixture. Top with a layer of noodles then repeat the layers.

*Do not add the cheese topping (1 cup) until the final 5 minutes of cooking.

Place the lasagna in a 350 degree oven for 20 minutes.

Makes 6 1-cup servings.
