Dukan Chicken and Herb Omelette Sandwich

2 Tablespoons Oat Bran1 Tablespoon Wheat Bran1 Teaspoon Baking Powder2 Tablespoons fromage frais2 eggs1 egg white1 Tablespoon chopped parsley50g chopped cooked chicken breastHerbs of your choice1 Tablespoon quark ( for spreading)
Makes one serving
In a rectangular bowl, thoroughly mix the brans, baking powder, fromage frais and 1 egg.
Add the chopped parsley and heat in the microwave (800W) for 4 minutes.
Turn out and allow to cool a little before cutting the "bread" into 2 slices and toasting very lightly so that it does not go dry.
Make an omelette with the remaining egg, the egg white and the herbs.
Fold over the 4 edges to make a rectangle.
Spread each slice of bread with quark.
Make up the sandwich by putting the chopped chicken on the bottom slice then placing the omelette on top and covering with the top slice of bread.
