Bette Hagman's Gluten Free Bread

2 tsp vinegar4 eggs4 tbsp olive oil2 cups milk or almond breeze (warmed)4 cups gluten-free flour mix (see instructions)6 tbsp sugar4 tsp xanthan gum2 tsp salt3 tsp yeast
Great base for any type of bread. I routinely substitute garfava flour, add grated cheese and onion flakes, and even cinnamon and raisins to this basic receipe with great results. This makes a large loaf and cooks well in my bread machine which makes a horizontal loaf. I use the 2.5 pound, light crust selections and use the basic loaf cycle. Put ingredients in the baking pan as your machine recommends. I start with all the liquids and then add the flour and then the rest of the dry ingredients, finishing with the yeast. Then press the button and enjoy the aroma!
Gluten-Free Flour Substitute
2 Part white rice flour
2/3 Part potato starch flour (NOT potato flour)
1/3 Part tapioca flour/starch
I make it easy and use 2 cups rice flour, 2/3 cup of potato starch and 1/3 cup of tapioca. I make up a large container of the mixture, sifting each 3 cup portion as I go. Resift before using.
