Mexican Rice

Ingredients
1 medium onion, chopped 4 large garlic cloves, coarsely chopped 1 c. brown rice 1 1/2 c. water 1 c. salsa 1/2 T olive oil1 t salt1/2 t black pepper
Directions
Sauté the onions for two minutes in the olive oil. Add the chopped garlic, rice, salt, and pepper and sauté for a few minutes, until the rice has started to lightly brown. Add water and salsa and bring just to a boil. Lower heat to simmer and cover. Cook for 20 - 25 minutes or until rice is done (contrary to popular belief, it's okay to check doneness sometime in the last 5 minutes - just do it once and be very quick about it!). Let rice rest, covered, for a few minutes before serving. 4 servings.
