Low Calorie Chicken Salad

Ingredients
2 lbs chicken breast (skinless and boneless)1 large Granny Smith apple (diced)3 cups seedless grapes, chopped3 tbsp lemon juice1 tbsp light mayonnaise1/2 cup fat free sour cream1/4 cup fat free plain yogurt2 Tbsp Balsamic Vinagrette salad dressingSalt PepperPoultry Seasoning2 cups chicken broth
Directions
Poach chicken breasts in broth and seasoning for about 15 minutes.
Put chicken through food processor.
Chop green apple and toss in 1 tbsp lemon juice.
Chop grapes and add to apples.
In small bowl combine sour cream, yogurt, mayo, lemon juice and Balsamic dressing. Whisk ingredients together.
Add dressing mixture to chicken and blend.
Add apple and grape mixture to chicken and blend.
Season to taste.

    I used celery not grapes (didn't have grapes, but I think they would be great). Also used raspberry poppy seed dressing instead of basalmic vinigrette (again didn' t have). It was delicious, just what I was craving. - 10/6/07
