Bob's Red Mill Whole Wheat Flour, 1.5 cup Unsweetened Applesauce, 0.5 cup Better N Eggs (egg whites), 0.5 cup Peaches, fresh, 1 large Pecans, .3 cup, chopped Sun Maid, California Chopped Dates, 0.3 cup Baking Soda, .5 tsp Baking Powder, 1.25 tsp Cinnamon, ground, .5 tbsp Pumpkin Pie spice, .5 tsp Splenda, 0.75 cup
Preheat oven to 350 degrees (or 325 for convection oven). Cut peach into small square pieces and then whip with a fork until smooth. Combine all dry ingredients first, then add wet ingredients and stir until mixed well. Don't over-mix. Pour into foil baking cups in 12 muffin pan and bake for 18-23 minutes or until toothpick inserted in center of muffins comes out clean.
