Panko Crusted Mustard Pollack

Ingredients
1.5 pound fillet Trout8 teaspoons olive oil (divided in half)2 tablespoons yellow mustard2 teaspoons dried dill weed.75 cup Panko bread crumbs3 tablespoons dried parsley (Keep one tablespoon separate..25 teaspoon Hungarian paprikaSalt and pepper to taste
Directions
Place fish skin side down in a baking dish. In a bowl, combine mustard, 4 teaspoons olive oil, dill weed, paprika and 2 tablespoons parsley. Spread on top of fish. In another bowl, combine the remaining ingrediants, and press the mixture evenly along the top of the fish.

Bake for 20-25 minutes until done. Makes 4 servings.
