Apple Crisp Muffins

Ingredients
1½ cups whole wheat pastry flour½ cup rolled oats2 tsp baking powder1 tsp baking soda½ cup raw sugar¼ cup brown sugar2 tsp cinnamon¼ tsp ground gingera dash of nutmeg¼ tsp salt1 cup unsweetened applesauce1 cup apple, diced¼ cup pure maple syrup
Directions
Prheat oven to 350 F. Grease muffin tin or spray paper liners to prevent sticking and set aside. In a large bowl, whisk flour, oats, baking soda, baking powder, salt and spices together until well combined. Add applesauce, sugars and maple, then stir until almost combined. add apples, stirring until just combined. Spoon into muffin cups 3/4 full. Sprinkle additional oats and brown sugar over top if desired. Bake 18-25 minutes, or until a toothpick inserted in the center comes out clean.

    Delicious! I used granulated sugar because I didn't realize I was out of my raw sugar until I had already started these. And I sprinkled extra oats on the tops before baking. Turned out great! One note: I only got 14 muffins out of this batter. - 10/13/10

    Just finished baking this and it was Delicious. Hubby came home from work and loved them. I used sugar twin brown sugar instead of brown sugar and the homemade apple sauce recipe on this site without using any sugar in it, and regular pancake syrup as that was what I had on hand. Sooooo yummy! - 8/23/10
