Orange and Rhubarb Muffins

Ingredients
2 c flour3/4 c sugar1 1/2 tsp baking powder1/2 tsp baking soda1 tsp salt1/2 c chopped walnuts1 egg1/4 c vegetable oil3/4 c orange juice1 1/4 c finely chopped rhubarb
Directions
In large mixing bowl, combine flour, sugar, baking powder, baking soda, salt and nuts. In another bowl, combine egg, oil, and orange juice. Add to dry ingredients all at once, and stir just until moistened. Stir in rhubarb. Fill muffin cups almost to top. Bake at 375 degrees for 20 to 25 minutes.

    Absolutely delicious! I used vegan Egg Replacer instead of one egg. My batter came out slightly thick, so I just added a tiny bit more of orange juice. They came out great! Thanks for a wonderful recipe! - 2/22/09
