Rhubarb Apple Popsicles

Ingredients
Rhubarb, 2 cups dicedApple Sauce, 4 oz snack cupSugar, 2 tsp (or to taste)
Directions
Take the rhubarb stalks and cut them into small pieces. The larger you make them the more texture you'll have in your popsicle.

Put the 2 cups of rhubarb into a microwave safe bowl and microwave until the rhubarb becomes soft. (I have a fresh vegetable setting and that is what I used).

Mix in the apple sauce and sugar to taste.

Place in either popsicle containers or even in small snack sized ziplock bags. Then into the freezer!

makes 4 servings!

    I tried this today - I didn't have the applesauces so I used a Del Monte Fruit Chiller - Arctic Strawberry. Changes it to 55 calories, 4.9 sodium, 14 g carbs, etc. Love it that you can get 1.6 g fiber from a popsicle! - 7/23/10

    I like Strawberry-Rhubarb pie - actually that's not the truth. If Strawberry-Rhubarb pie is within sniffing or seeing distance, I know I'll need 2 adjust may daily calorie allotment. This isn't Strawberry-Rhubarb pie - it was a whole different taste. Awesome! I chose 2 use Splenda 2 reduce calories. - 7/21/10

    This is so yummy. I used a strawberry applesauce Applesnax with just a little sugar. I ate some right away as a sauce and made popsicles out of the rest. It would probably be good over vanilla ice cream, too. Awesome, and so easy to make. - 6/5/11
