Ingredients
3 TBS olive oil2 onions3 red peppers3 cloves garlic2 cups (1 lb.) zucchini1 eggplant2 Large whole tomatos
Directions
Add olive oil to pan. Saute chopped onion and sliced peppers for 5 minutes. Add chopped garlic, zucchini, and eggplant, cook for 25 minutes. Add tomatos cook 5 minutes. Serve!
