Sweet Omlett Goodness

Ingredients
(all items bought at a farmer's market)2 Fresh Farm EggsOlive Oil 1 tsp rice milk1/8 tsp (really, just a few dashes will do) tumeric1 Tbsp Fresh Goat Cheese6 left over sweet potato fries, diced3 good sized cremini mushrooms, sliced3 fresh sage leaves
Directions
Heat large skillet pan on med heat.
Add diced potatoes, sage, and mushrooms to pan to let them sweat and cook a bit.
Whisk eggs, tumeric, and rice milk together in a bowl. get other ingredients ready.
Drizzle oil over pan or spray pan with cooking spray - and make sure that the entire skillet is covered
Pour egg mixture onto skillet and tilt pan to make egg mixture lay flat like a pancake. Let cook 1 minute or less (depending on heat of the pan)
Add ingredients on 1/2 of the egg mixture and let sit for 1 minute.
Flip other side ontop of the mixture and let sit until insides are firm and cheese is melted.
Slide onto plate and serve.
