Homemade Garlic Onion Pita Bread

Ingredients
3 - 4 Cups Whole Wheat Flour1/2 Tsp Salt (or garlic Salt)1 pckg Active Dry Yeast1 1/4 Cup Warm Water (can also add additional herbs, spices to your liking)
Directions
Preheat oven to 500 degrees.

In a large mixing bowl, combine yeast and the warm water. Allow yeast to bubble (approx 3-5 minutes). Add 2 Cups of flour and the salt. Mix well. Slowly add another cup of flour. You only want to add enough that the dough starts cleaning the sides of the bowl. (For me, this was just shy of 3 Cups)

Take the dough out of the bowl, and on a lightly floured surface, knead the dough until it is smooth and elastic-y. This is the place where you would add any other herbs and spices. I chose to make mine onion/garlic, so I added a little onion and garlic powder. Be sure not to over-knead the dough.

Seperate the dough into 10 little balls. Roll them down to approximately 5-6" in circumference, about 1/4" thick. My first try made only 9 and a very small additional pita (I think they were too thick).

Set the flattened pitas into a cookie sheet and let rise for approximately 30 minutes. Once they have risen, flip them over and place them on the bottom rack in the oven. (so the side that was down while rising, should now be up in the oven). Leave them directly on the rack for 5-6 minutes, the immediate heat will cause them to "puff" up.

The dough will come out and feel rather hard. While it is still warm, place immediately into a bag or other storage container. Allow them to cool in the container. They will then be ready to slice and serve.

This was my first attempt at making homemade pita's. I am sure there is a margin for changes, but practice makes perfect. I would love comments and/or suggestions to make the recipe even more delicious!

    1st try didn't work for me -- 2nd try on 8/16 with adaptations did. Turned out my oven racks were too widely spaced to cook pita dough on. Later tried cooking on alum foil and did well. I flour plates or trays well before letting pita rise. Good taste!! - 11/25/15
