Vegan Tomato and Tofu Soup

5 large ripe tomatoes; peeled and cored1/2 pkg. (454 g) medium tofu2 tsp vegetable stock1 celery stalk; finely chopped1 medium onion; finely chopped1 tsp lemon or lime juice1 tbsp parsleysalt and pepper to taste
Puree tomatoes with tofu.
Put into pot with rest of ingredients.
Cook for 20 minutes or until celery and onions tender. Serve.
