Purple cabbage cups

8 oz of boneless, skinless porkloin (cut into cubes) - browned lightly1 Cup carrots, chopped1 cup celery, chopped1 cup portabella mushrooms, chopped1/4 cup chopped scallions6 tbs Kraft Roasted Red Pepper Italian Dressing6 large purple cabbage leaves (whole)salt & pepper to tastecumin to taste
Cut pork loin into cubes and lightly brown in sauce pan.
Remove and add in chopped carrots, celery, scallions, mushrooms, dressing & seasonings. Mix together well.
Seperate the cabbage leaves into 6 large cups and fill about half way with the mixture. Then fold together & secure with a couple of tooth picks. Lay into baking dish - brush with more of the Italian Dressing and then bake for 25-30 minutes (until cabbage is tender).
