Fresh Tomato Vegetable Pasta Sauce, whole batch (see separate recipe here on Spark)Spinach, fresh, 100 grams Tomato Paste, .5 can (6 oz) Stewed Tomatoes, 1 cup No Salt Added Tomato Sauce, 15 oz. can2 oz. sake or dry wine1/4 cup EVOO - best quality
Make fresh tomato vegetable pasta sauce according to directions (separate recipe here on spark) and meanwhile combine all other ingredients except EVOO in blender or food processor. Blend until still a bit chunky, and rustic in appearance - you don't want this to turn into baby food! Add to the very end of the cooking stage of the other sauce, and let it simmer for a few minutes, no longer. You don't want to diminish the flavor of the fresh spinach and wine! Taste and adjust seasonings, adding salt/pepper/red pepper flakes/italian seasoning to your liking. Let the sauce cool completely before adding the EVOO - heat destroys the fruity flavor of a good olive oil.
