Ingredients
1 large aubergine (200g)1 garlic clove (opt)1/2 tsp salt1/2 tsp ground black pepper1/4 tsp ground cumin2 tbs olive oil1 tbs chopped coriander/ parsley
Directions
Preheat your oven to 190˚C

Bake the aubergine whole with the stalk left on for 40 minutes, or until brown and soft to the touch. Leave to cool, then peal.

Liquidise until smooth with the spices.

Stir in herbs. Serve on flat breads, crackers or as a dip with crudites

    Loved it!
    I used no Garlic in mine.
    I only had cumin seeds, I lighted roasted them with oil in a pan then crushed them up, I used half a tsp, not 1/4 so it had a nice spicy aftertaste kick to it.
    I also used only parsley.
    It is delicious, I pretty much ate the whole thing myself...

    This is a good basic recipe, some tips: Leave away the oil, I didn't need it at all, spread was already very liquid. Bake for 30 minutes, that's enough. Mine was about 1/2 to 3/4 cup, so not really 6 servings...anyway, great low-cal recipe, thanks for sharing! - 5/4/10
