Pumpkin Protein Bars

8 egg whites1/2 c low fat cottage cheese (1%)2 cups oats1 c canned pumpkin4 scoops vanilla protein powder1/2 c water1/2 splenda1 tsp vanilla2 tsp pumpkin pie spice (cinnamon, cloves, nutmeg, mace, ginger)1 tsp baking soda
Mix together in blender and pour into 9x12 pan sprayed with pam. Bake at 350 for 20 minutes. Cut into 6 squares.
If you want them crunchy, take the bars and cut in half the slice down the middle. Spray cookie sheet with pam and place cut side down. Re bake at 375 for 10 minutes until brown and crunchy.
For chocolate flavored -- subsitute 2 tbs dry cocoa powder instead of pumpkin pie spice and use chocolate protein powder instead of vanilla.
