Meatloaf Dinner

Ingredients
1 lb lean ground beef or ground turkey1/2 cup stove top stuffing1 egg3 Tbls skim milk1/2 cup Annie's organic ketchup, divided1 Tblsp dried onion3-4 small to medium red potatoes, cut into bite size chunks4 medium carrots, cut into bite size chunks2 tbslp butter, meltedsalt and pepperolive oil spray
Directions
Spray 9x13 baking pan with olive oil. Put potatoes and carrots in the pan, drizzle with melted butter and sprinkle with salt and pepper. Cover with foil and bake for about 30 minutes.

Meanwhile, mix ground beef, stuffing mix, onion flakes, 1/4 cup ketchup, egg and skim milk. push the vegetables to the sides of baking pan. Place meatloaf in center, bake another hour. During last 10 minutes of cooking time remove foil and pour remaining ketchup over loaf.

Makes about 5 servings.
