Hominy Bean Salad

Ingredients
2 cups fresh green beans, cut in 2-inch pieces or 1 15 oz. can kitchen cut green beans, drained1 15 oz. can kidney beans, rinsed and drained1 15 oz. can hominy, yellow or white, rinsed and drained1 15 oz. can black beans, rinsed and drained1 cup thinly sliced celery1 cup chopped sweet red or vidalia onion1/2 cup minced fresh cilantro1/2 cup white wine or cider vinegar 1/8 cup olive oil2 teaspoons Splenda1 garlic clove, minced1/2 tsp. salt1/2 tsp. coarsely ground black pepper
Directions
If using fresh green beans, place in a saucepan and cover with water. Bring to a boil and cook, uncovered for 8-10 minutes or until crisp tender. Drain and rinse in cold water.
In a serving bowl, combine green beans, kidney beans, black beans, hominy, celery, and onion.
In a jar with a tight-fitting lid, combine remaining ingredients. Shake well. Pour over vegetables and stir gently to coat. Cover and refrigerate for at least one hour.
Makes approximately 12- 1/2 cup servings.
