Ingredients

3/4 c. cornmeal3 c. water1/2 tsp. salt1 tsp. olive oil cooking spray3 tbls. parmesan cheese1 chopped jalapeno (optional)
Bring water and salt to a boil. Slowly pour the cornmeal into the water, stirring and keeping the water boiling.
Cook, stirring occasionally, for 10-15 minutes until polenta is thickened to the point where a spoon could stand up in it. Stir in the olive oil and parmesan cheese. Chopped jalapeno can be added for a little southwestern kick.
Spray a cookie sheet and pour the polenta out to cool. When cool, cut into squares. Makes about 10 squares that can be eaten as is or grilled.
