Lemon Chicken with Mint

Ingredients
1/4 cup finely chopped fresh mint1/2 tsp oregano1/2 tbsp basil1 tsp garlic powder1 tsp saltJuice and zest of one lemon1 tbsp olive oil4 tsp honey mustard4 skinless, boneless chicken breasts
Directions
Mix chopped mint, lemon zest, oregano, basil, garlic powder, salt, lemon juice, mustard and olive oil. Let chicken marinate at room temperature for 10 - 20 minutes.
Grill on BBQ on medium heat for 6 minutes and then brush more marinade on the breasts, and then grill until chicken is springy. Remove from grill and serve with lemon wedges.

    I eliminated the basil (simply because I didn't have any around) and used dijon instead of honey mustard and about 2 tbsp of lemon juice instead of fresh lemon & zest. I cooked on the George Forman and everyone loved it! - 1/18/11
