Beef Tamale Bake

Ingredients
1 1/2 cups yellow cornmeal1/2 cup unbleached, all-purpose flour1/2 tsp baking powder1/2 tsp salt1 cup hot water2 egg whites3 tbsp all vegetable shortening, melted1/2 lb lean ground beef (93%)1 jar (16 oz) salsa1 can (15 1/2 oz) dark red kidney beans, drained and rinsed1 garlic clove, pressed1 1/2 tsp chili powder1/2 tsp ground cumin1/2 cup (2 oz) shredded Mexican cheese blend
Directions
Preheat oven to 400 degrees. Spray 8x8 pan with cooking spray. In mixing bowl, combine cornmeal, flour, baking powder, and salt. Whisk water, egg white, and shortening into cornmeal mixture. Stir until smooth. Pour batter into baking dish. Brown ground beef, breaking into crumbles; drain if necessary. Add salsa, beans, garlic, chili powder, and cumin to beef; mix well. Bring to a boil over medium heat. Spoon beef mixture evenly over batter. Bake 20-23 minutes or until crust is set. Remove from oven; sprinkle with cheese. Let stand 5 minutes. Yield: 8 servings.

FYI: The nutrition facts for this recipe do not reflect draining and rinsing the beans, so the sodium should be less if you do this.
