Cheeseburger Zuke Soup

Ingredients
0.5 of a large onion, chopped finely4 oz. carrot, chopped finely 1 zucchini, diced16 oz. ground lean turkey, cooked and crumbled2.5 cups of water1 14.5 oz can of chicken broth2 cups of rice, cooked10 ounces of reduced fat velveeta, cubed2 cups of 1% jmilk
Directions
In a large saucepan, saute veggies until tender. Add in cooked turkey, rice, water, and broth. Cook for 2 minutes. Add in velveeta and milk. Cook over low heat until velveeta is melted through.

Makes 8 1-cup servings.
