Carrot Ginger Tofu Soup-Vitamix

Ingredients
4 medium carrots, peeled, halved1/4 small onion, peeled4 garlic cloves, peeled2 Tablespoons oil1/2 teaspoon salt (or omit if using veg. broth with salt)pinch of white pepper1 Tablespoon fresh ginger root 1/3 cup light silken tofu2 cups low sodium vegetable broth
Directions
1. Place carrot, onion and garlic into the Vitamix container and secure lid.

2. Select Variable 1. Turn machine on and quickly increase speed to variable 4 or 5. Blend for 10 seconds or until chopped.

3. Heat oil in a frying pan and saute chopped ingredients until onion is clear and carrots are tender. Add a little broth, if needed.

4. Place remaining ingredients into the Vitamix container, add sauteed ingredients and secure lid.

5. Select variable 1. Turn machine on and quickly increase speed to Variable 10, then to High. Blend for 3 or 4 minutes or until heavy steam escapes from the vented lid.

This is also good with one raw red bell pepper blended.

    I cooked it in a pot and pureed it with an immersion blender. It's pretty good, but spicy. I may have put too much white pepper, or maybe it's the ginger that makes it hot. But you really don't notice a strong carrot flavor at all. And the texture is nice. - 5/1/19
