Homemade Garibaldi Biscuits (Gluten Free)

Ingredients
4 tbls Potato flour 1 cup + 12 tbls White Rice Flour1 tsp Baking Soda (Gluten Free)1 tsp Cream Of Tartar2 tsp Xanthan Gum or Guar Gum6 oz Raisins (chopped)3 - 6 tbsp 2% Milk3 oz Granulated Sugar
Directions
1. Measure 4 tbls potato flour place into 1 cup measuring cup, add white rice flour to make 1 cup. Place in bowl and include 1 more cup of white rice flour.
2. Add baking soda, cream of tartar, xanthan gum, and sugar to flour. Mix throughly.
3. Cut butter into flour mixture using finger tips or pastry cutter.
4. Add enough milk to make a stiff dough.
5. Split dough into 2 halves.
6. Roll dough between 2 peices of saran wrap evenly to 1/8" thick.
7. Cut rolled dough into equal halves.
8. Place half of the chopped raisins on one side of the dough. Cover with other half of rolled dough and roll combined cookie to approximately 1/8" thick.
9. Cut into squares.
10. Bake in 400 F oven 12 - 15 minutes or until lighly golden brown.
