Black bean and brown rice salad

6-7 cups brown rice2 cans black beans, rinsed2 celery hearts, finely chopped1/2 cup olive oil1/2 cup cold water4 TBLS cilantro, dried or fresh4 TBLS frozen orange juice concentrate3 TBLS cumin seed, ground3 TBLS chili powder
Cook brown rice in a rice cooker or on the stove until tender while preparing other ingredients. Open and rinse both cans of black beans. Set aside in a large bowl. Rinse both celery hearts, and finely chop into bite sized pieces. Mix in with the black beans.
In a smaller bowl, mix olive oil, water, cilantro, frozen orange juice, cumin, and chili powder. Whisk together for 2 minutes, cover, and refrigerate for 10 minutes.
While waiting for the dressing to chill, add finished rice into black bean and celery mix, toss well, and then add dressing. Mix well.
Cover and chill approx. 2 hours and keep refrigerated until served. Makes 18 servings. (1/2 cup serving size)
