Vegan Pumpkin Seed Brittle

Ingredients
Sugar 28 oz.Water 12 oz.Glucose 20 oz,Raw Peanuts 28 oz.Salt 2 tsp.Earth Balance 2 oz.Vanilla .5 oz.Baking Soda .25 oz.
Directions
Combine Sugar and Water in a heavy saucepan and bring to a boil, stirring constantly.
Add the glucose and continue cooking without stirring to 239 degrees F
At 239 degrees F add the peanuts and continue stirring over moderate heat to 311 degrees F
Remove from the heat and stir in the salt, Earth Balance and vanilla.
Once incorporated add the Baking soda and stir well.
Pour onto an oiled surface in a single mass and spread with a spatula,
Allow to cool slightly.
Wearing gloves pull from the edges working arund the mass and breaking off pieces as they harden. (Work quickly before the brittle hardens.)
