Quinoa Corn Salad

Ingredients
1 cup of quinoa1 1/2 cups of water2 1/2 cup of frozen or fresh corn1 cup of cucumber, diced1 large carrot, shredded1/2 cup chickpea sprouts3 tbsp lemon juice3 tbsp lime juice1 tsp of tabasco sauce
Directions
Cook quinoa for 15 minutes after rinsing. Strain off any excess liquid and set aside to cool.

Steam or saute corn lightly. Toss remaining ingredient together. Season to taste.
