No Bake Strawberry Cheesecake Delight

Ingredients
8 ounce container of Cool Whip Free8 medium strawberries 6 packets or tsp. of splenda6 oz. of strawberry yogurt (nutrition facts will vary depending on type you use)1/4 cup of lowfat ricotta cheese1/4 cup fat free milk1 small package of jell-o brand fat free-sugar free cheesecake mix2 whole cinnamon graham crackers
Directions
Thaw an 8 ounce container of Cool Whip Free at room temperature. Slice 8 medium strawberries and set aside. When Cool Whip is thawed pour into large bowl. Add 6 packets or tsp. of splenda or any other artificial sweetener to the cool whip. Add 6 oz. of strawberry yogurt (nutrition facts will vary depending on type you use), add 1/4 cup of lowfat ricotta cheese, 1/4 cup fat free milk, the small package of jell-o brand fat free-sugar free cheesecake mix and the strawberries and mix all together either with a spoon or a mixer. When you have it thoroughly mixed spread it evenly in an 11X7 cake pan. Crush the graham crackers and top the cheesecake with them. Refridgerate for 2-3 hours then cut into 12 equal squares and enjoy. I promise you will love it!

    I only used 2 tsp. splenda, but only because the strawberries I bought had little taste. I think it would be fine without any additional sweetner. I also put it in individual dessert dishes rather than a pie crust and it was ok, but I probably won't make it again. - 5/2/10

    My only recommendation would be to maybe freeze it, as it didn't scoop out very well once it was brought out of the refridgerator, other than that, loved it. - 2/8/10

    I don't have splenda at home, so I used 1/4 cup of sugar in place of the splenda. It worked great and only added 14 additional calories. 79.7 calories was still a bargain for this desert. - 3/30/08

    This was super, I used WW yogurt and didn't have fresh strawberries so used 1 cup partially defrosted frozen strawberries, sliced and sprinkled with a little splenda, it worked great. Next time I will put it in a reduced fat graham cracker pie crust. - 7/19/07
