Easy Oven Polenta

Ingredients
2 cups water2 cups vegetabel or chicken broth1 tsp salt1 cup cornmeal.5 TBL butter75 gr shredded cheese, Swiss, etc.....1 TBL parsley30 gr blue cheese
Directions
Makes 6 servings

Pam a casserole dish and preheat oven to 350° Mix the salt, broth, water, cornmeal and butter, pour into dish and bake for 40 minutes. Stir in cheese and bake another 5 minutes. Let sit for 5 minutes and top with parsley. A great side dish, or, you can pan fry leftovers the next day. I have used many different cheeses and combos. The recipe info was figured using full fat Swiss.
