Bean Sprout Egg Drop Soup

3 cups Chicken or vegetable broth (fat free)1 tsp Soy Sauce2 tsp cold water1 tsp cornstarch1 Cup bean sprouts2 egg whites, lightly beaten2 green onions, finely chopped
In a saucepan over high heat, bring broth to a boil.
Combine soy sauce, cold water and cornstarch; stir again to mix well and stir into broth until thickens slightly and is clear.
Stir in bean sprouts; bring mixture just back to a boil.
While stirring, slowly pour in egg whites and immediatley take off heat.
Ladle into warm tureen or soup bowls.
Sprinkle with chopped green onion.
Makes 4 , 1 cup servings.
