Garden Pasta Salad

1 Box Barilla whole grain penne pasta, 13.25 oz1/3 c reduced fat mayo1/3 c low-fat or greek yogurt2 T olive oil1 T red wine vinegar or lemon1 clove garlic, minced1/8 tsp saltfreshly ground pepper to taste or Mrs. Dash1 c cherry or grape tomatoes, halved1 c diced red or yellow bell peppers1 c grated carrots (2-4 carrots)1/2 c chopped scallions1/2 c chopped pitted olives(black or kalamata1/3 c slivered fresh basil
Cook pasta in pot of boiling salted water, around 10 min. Drain and refresh under cold running water.
Whisk mayonnaise, yogurt, oil, vinegar, garlic, salt and pepper in a large bowl until smooth. Add the cooked pasta and stir to coat.
Add chopped vegetables and stir.

I was going to add this recipe today, as I had found it earlier on the Eating Well site, and used it for a picnic. It was delicious! I'm glad someone already entered the recipe, it save me the time and effort. The only thing I did differently was to use Rotini instead of Penne pasta. - 6/26/10
