Egg Whites Scrambled with Sauteed Vegatables

Ingredients
Olive Oil, 1 tbspGarlic, 2 cloves mincedYellow Onion, 1/4 cup choppedMushrooms, 1/4 cup choppedTomatoes, 1/5 cup choppedFresh Baby Spinach, 1/5 cup choppedEgg whites, 3Salt, 1 pinch
Directions
Heat olive oil in small sautee pan over medium high heat. Add garlic and onions and sautee for 2 - 3 minutes until onions become translucent. Don't let garlic burn. Add salt.

Add mushrooms and tomatoes. Sautee for another 2 - 3 minutes. Add spinach and cook until spinach begins to wilt, approximately 1 minute.

Reduce heat to medium and add egg whites. Scramble until fully cooked.

Served with 1 slice of multigrain toast to complete the meal. (Toast not included in nutrition information.) Makes 1 serving.
